Brewery X in Anaheim, CA: What to Expect
The La Palma Beer trail is legendary in Orange County for its high concentration of craft breweries, all nestled within a string of Anaheim industrial parks. Near the halfway point, you’ll find a large gray building, which houses Brewery X, an Orange County brewing powerhouse.
Established in 2018, Brewery X features a sprawling beer garden that captures the essence of traditional biergartens, where friends and family can come together to enjoy a wide selection of brews and good company.
We spoke with Brewery X’s Chief Brewing Officer, Trevor Walls, who shared more about the venue’s design:
“Upon entry, you’re greeted by an enormous lakefront, outdoor biergarten that accommodates hundreds of people, is family- and pet-friendly, yet still has the comfort and feel of being at a resort pool or a large European biergarten. As you go inside the first taproom, you experience more of a traditional, quaint pub feel with comfortable furniture and fixtures. Further past the taproom, you enter the much larger beer hall which is complete with communal-style table and bench seating and 10+ big screen TVs so you can catch any sporting events that are going on.”
The space is indeed vast. And just when you think you’ve discovered every nook of the property, a visit to the restroom surprises you with a museum-like display of brewing equipment and pallets of cans prepared for distribution—the very setting where the pint you’ve just savored was crafted.
Brewery X’s “more is more” approach extends beyond its walls, influencing the broader Southern California craft beer scene. Renowned for both their seltzers and beers, their varieties can be found in grocery stores like Whole Foods, as well as at Angel Stadium and the Honda Center.
In addition to their diverse selection of brews, Brewery X stands out for their food offerings. Food is typically an afterthought at breweries; however, Brewery X’s pizzas are also consistently recognized as some of the best in OC.
Walls explains, “Our award-winning chef, Trevor Kotchek, is a New York native who prides himself on making the most authentic New York-style pizza in Southern California. From the fresh ingredients, to the water that is used to create the dough, everything is of the highest quality. We actually use the same water filtration methods used in the brewery to recreate an authentic Hudson River, New York water profile that Trevor requires for his dough.”
As real estate prices in Orange County continue to rise and communal spaces become scarce, places like Brewery X feel especially necessary.

How did the idea for Brewery X start?
Brewery X was born when a group of friends and their families started getting together to have some beers/seltzers and enjoy some good times. After visiting numerous destination breweries, restaurants, pubs and bars, the idea of starting our own would arise more frequently. Hence the name Brewery X…the “X” represents people crossing paths and coming together over beer.
Can you tell us more about your production process?
We pride ourselves on our raw materials and unique approach to building each beer and seltzer. Water is the most important ingredient in any beverage because it accounts for 90+% of the make-up of that particular drink. Beers and seltzer are no different. We use a series of different reverse osmosis filters to match different global water profiles. For example, if we are brewing a German-style beer, we will match the mineral content, alkalinity, and pH of Munich, Germany’s water profile to recreate the same iconic taste you’d get from a traditional German beer straight from a Biergarten. We source our barley, hops, and fruit from all over the world so everything is of the highest quality.
What styles are you best known for?
Brewery X is known primarily for 3 different “styles”. Our hard seltzers are some of the most sought-after hard seltzers in California and there are always at least 10 choices of flavors. As far as beer goes, Brewery X is a highly decorated IPA and traditional lager brewery. Our Slap & Tickle IPA is, by far, our most popular beer. Slap & Tickle is designed to be extremely drinkable with low bitterness and hoppy notes of tropical fruit and citrus. Close behind is out Duck Beer Blonde or BattleSnakes Pilsner. Huckleberry and Succulent Sipper are the stand out seltzer favorites.
The Brewery X venue is huge! What goals did you have in mind when you designed the space?
Our goal was to create Orange County's premiere destination brewery. We wanted to have multiple different “experiences” to offer our guests. We didn’t want people to have to wait in huge lines to get food or drink so we designed multiple bars/counters for our guests to go to get what they need. We also have multiple restrooms and a large parking lot to allow guests to conveniently come and go from the venue.
