608 Dahlia was started by Chef Jessica Roy, an Orange County native, who saw the gardens as the perfect setting for a farm-to-table restaurant. She collaborated with local agricultural partners to source fresh ingredients, creating vibrant salads and standout dishes like the pan-seared salmon.

Meet Chef Jessica Roy

Tell us about your journey to opening 608 Dahlia! 

I have been cooking professionally for 15 years. I have always had an entrepreneurial spirt, so when I was approached to open a restaurant inside of the Sherman Gardens, I could not turn it down. I opened 608 Dahlia in 7 weeks and brought my garden-to-table vision to life. 

What is the inspiration behind 608 Dahlia's concept and menu?

Gardening has always been a part of my family’s heritage, so when I had the opportunity to open a restaurant within a botanical garden, I knew I wanted to celebrate that connection. In California, we don’t experience dramatic seasonal changes, but my dishes reflect the subtleties of each season in my menus. To complement the food, I also change the restaurant’s ambiance and decor with the seasons. My goal is for guests to enjoy delicious, seasonal dishes while feeling immersed in a beautifully curated space.

What is your philosophy when it comes to sourcing ingredients? 

I am committed to sourcing the highest quality ingredients available. I love working with local purveyors and small businesses to build meaningful relationships and bring unique, exceptional products to the restaurant. For me, the guest experience is everything, and sourcing thoughtfully allows me to create dishes that truly stand out.

What do you like about being located in Orange County? 

As someone born and raised in Orange County, I have a deep appreciation for the sunshine and coastal breezes that define this beautiful area. My food reflects the vibrant energy and natural beauty of the state I’ve always called home. Orange County provides the perfect backdrop for crafting dishes that celebrate the abundance of California.

What is a must-order on your menu?

You can’t miss our biscuits! They’ve become my signature dish and are one of my greatest passions. They’re so popular that I’ve launched them in our online store so guests can take and bake them at home. Being part of people’s celebrations, whether in the restaurant or at home, brings me immense joy.

What do you hope visitors will take away from a visit to 608 Dahlia? 

Memories—that’s why I cook. I love creating food and experiences that stay with people long after they’ve dined with us. Many of our guests visit to celebrate milestones, and we’ve become known for being a part of those special moments. My goal is to offer an experience and environment that perfectly complements their celebrations, making their visit truly unforgettable.
